The Amazing Origin Story of CarrotsCarrots (*Daucus carota*) are believed to have originated over 5,000 years ago in Persia (modern-day Iran and Afghanistan). Early carrots were not the bright orange we know today—they were purple, white, yellow, and even red! Carrots spread across ancient civilizations, prized for both their medicinal properties and their edible greens.


It wasn’t until the 17th century in the Netherlands that the familiar orange carrot was developed, in tribute to the ruling House of Orange. Thanks to selective breeding, orange carrots became the global favorite and are now grown everywhere from backyard plots to large farms.

Fun Carrot Facts- Carrots weren’t always orange! As mentioned, purple and yellow varieties existed long before orange.

- **Carrots can be eaten root to tip.** Their leaves are edible (though a bit bitter) and can be used like herbs in salads or pesto.


- They’re great for your eyes, but not in the way you think.** While carrots are packed with beta-carotene (which turns into vitamin A), eating them won’t give you superhuman night vision.

- Carrot tops were once used as a fashion statement! In the17th century, Englishwomen wore carrot leaves as hair decorations.

Recipe: Simple & Sweet Carrot Salad: This easy carrot salad is crunchy, bright, and showcases the sweet flavor of fresh carrots. Perfect as a side dish or healthy snack!


Ingredients:

-4 medium carrots, peeled and coarsely grated-1 small apple, grated or julienned (optional for extra sweetness)

-2 tablespoons chopped fresh parsley-1 tablespoon lemon juice-2 teaspoons olive oil-1 teaspoon honey (or maple syrup for vegan)

- Salt and pepper, to taste

Instructions:

1. In a large bowl, combine the grated carrots, apple, and parsley.

2. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.

3. Pour the dressing over the fruit and veggies. Toss well to combine.

4. Chill for10-15 minutes, then serve!
